So as a Norwegian, I'm raised to believe that anything with potato in it is supposed to be a good thing. It's just that potatoes are kinda plain. This however haven't stopped people from using it for soup.
This sounds incredibly boring, but someone online suggested adding bacon and once you decide to do that, what you get is really bacon soup with potatoes on the side. To a bacon fetishist like me, this sounds remarkably enticing, and I had to give it a go.
I also know this one Canadian which is rather interested in food (to put it lightly), and he asked me to "document" it, so here it is, for you all to see. I even took pictures!
For those interested I stuck to the following ingredients:
- Thickly sliced bacon
- Yellow onions
- Green onions
- Garlic
- Cumin
- Carrots
- Milk
- Butter
- And... Potatoes
Pretty much everything except the milk and the garlic ended up diced or sliced. I fried the bacon in two rounds. First round was about half the bacon in butter and cumin and ground, black pepper, and then I added the second half once the bacon started getting somewhat crispy.
I added the yellow onions and stirred it into the mix, and the finally stirred in the minced garlic and quickly let this rest on the side, while I prepared the actual soup.
The soup was boiled in two stages. First I boiled up the potatoes and carrots to the point where they were soft enough to fork, but not really perfect yet. I then exchanged halfed the water for milk, and reheated.
Once the soup was boiling, I added some butter and spices to fatten it up and add some taste. Once the butter was melted I added the pre-prepped bacon, carefully made sure I got all of the tasty bacon-grease as well, and then finally the green onions and let it all work its way into the soup.
Once this was done, it was a pretty good soup really. I had it with garlic-bread on the side, made with a homemade 50/50 butter/garlic garlic butter.
I've definitely made worse dinners, and I made so much, I will be having this tomorrow as well ;)
